Dandelions have such incredible health benefits. To harness the healing of dandelion, here is one of my favorite recipes. This salad is one you’ll look forward to every Spring.
Luscious Dandelion Salad:
1 teaspoon mustard
1 tablespoon apple cider vinegar
1 tablespoon dried seaweed
2 tablespoons minced red onion
3 tablespoons olive oil
1 small bunch of dandelion greens
2 tablespoons raw pumpkin seed
1 ounce of Vegan Parmesan cheese
Salt and fresh ground pepper
In a blender, mix the shallot, mustard, vinegar and seaweed. Season with salt and pepper to taste. Pour into a small bowl and whisk in the oil in a slow stream.
Rinse / dry the dandelion greens and tear them. Toss them in a large salad bowl with the dressing.
Lastly, top with vegan Parmesan, tofu, beets, and sprinkle with walnuts if desired.
